The Science of Ripeness
Harvested at Peak Ripeness for Exceptional Flavour.
Unlike conventional harvesting, we handpick only fully ripened cocoa pods at their peak flavour. Working closely with our farmer partners, each pod is carefully assessed through colour and sound before being harvested and delivered to our fermentery within 24 hours, preserving freshness and unlocking its full flavour potential.

Meticulous Bean Selection
Every cocoa pod is meticulously inspected to ensure only perfectly matured, healthy pods move forward. Immature, damaged, or compromised pods are carefully removed, preserving the purity and flavour potential of every batch.
Every cocoa pod is opened with handcrafted wooden clubs to safeguard the delicate beans within. This traditional yet precise approach preserves bean integrity, laying the foundation for exceptional fermentation and fine-flavour cocoa.

The Art of Fermentation
Exceptional chocolate begins with exceptional fermentation. Our proprietary five-stage precision fermentation process combines scientific expertise with artisanal craftsmanship to reveal the rich, complex flavour profile that defines Great Indian Cocoa.
Every stage of fermentation is guided by precise monitoring of temperature, pH, Brix, and humidity. This meticulous control ensures consistent fermentation, revealing the complex flavour profile that defines Great Indian Cocoa.

Controlled Drying
Following fermentation, our cocoa beans are slowly dried under carefully controlled conditions to achieve the ideal moisture balance. This gentle process refines flavour, softens acidity, and reveals the complex notes that define exceptional Indian fine-flavour cocoa.
Drying is where flavour is refined. Our cocoa beans are patiently dried on movable racks, allowing us to balance sun and shade throughout the process. This controlled approach gently reduces moisture, preserves delicate flavour compounds, and delivers the consistency expected of premium fine-flavour cocoa.

Graded & Packed
Quality is refined through every detail. Each cocoa bean is carefully hand-selected to remove defects and natural impurities before being precision graded for size. This meticulous process ensures even roasting, consistent flavour, and uncompromising quality in every batch.
Our cocoa beans are carefully weighed, labelled, and sealed in high-barrier bags that lock in freshness, aroma, and flavour. Encased in durable jute sacks for added protection, every shipment is prepared to preserve the quality and traceability expected by premium chocolate makers worldwide.
